Best Ever German Chocolate Cake

This looks so delicious. I have gotten away for icing or frosting any cakes. However, this can change my mind. Haven’t had a German Chocolate Cake in ages. Really liking the looks of this one…

Bust Your Buttons Butter Cake

This lovely cake has just the right amount of sweetness and oh, how I loved the butter flavor! The glaze is simply wonderful.

Bust Your Buttons Butter Cake

Ingredients:
  • 3 c cake flour
  • 2 c sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 c buttermilk
  • 1 c (2 sticks) butter, softened
  • 2 tsp vanilla extract
  • 1 tsp almond extract
  • 4 eggs, room temperature

BUTTERY GLAZE
  • 1/3 c
  • butter
  • 3/4 c
  • granulated sugar (white sugar, not powdered)
  • 3 Tbsp
  • water
  • 1 1/2 Tbsp
  • vanilla extract

Directions:

In a stand mixer bowl combine the cake flour, sugar, salt, baking powder and baking soda and mix to combine.

Add the buttermilk, butter, vanilla and almond extract and eggs. Mix well. Do not over beat, mix just until ingredients are combined. Should take about three and a half minutes.*** Over beating can cause the cake to be tough. ***

Pour into a greased and floured bundt pan. ***DO NOT SKIP THIS STEP. SPRAYING IS NOT ENOUGH! TAKE THE TIME TO FLOUR IT OR IT WILL STICK!

Bake at 325 degrees for 1 hour to 1 1/4 hours or until cake tester comes out clean. Do not overbake!

**TIP: Baking times depend on many factors so start testing for doneness after 50 min. Depending on pan size and oven temp. variances you could under or over bake.

In the pan pierce the hot cake with fork tines or a bamboo skewer. Pour half the glaze slowly over the cake.

Cool in the pan for 15 min. then flip out onto a cake plate. Pour the remaining sauce over the cake.

Serve with fruit or ice cream. Refrigerate any leftovers.

GLAZE INSTRUCTIONS: Combine all the ingredients, except vanilla, in a sauce pan. Bring to a slow boil over medium heat. Stir in vanilla, set aside to slightly cool.

TIPS : BUNDT PANS come in all shapes and sizes. A standard bundt is 10-12 cups and that is what I used for mine.

CAKE FLOUR : I use Swan's - it is in a red and white box, found where the flour is at your local market.

What is cake flour? Can you substitute for it?

Here is what I found on the subject, many ladies have reported using it and the cake turned out just fine. Here it is:

Ingredients:
All-Purpose flour (just under one cup)
2 Tbsp. cornstarch

Preparation:
1. Place two tablespoons of cornstarch in a one-cup measure.

2. Fill the rest of the cup with all-purpose flour.

3. Use in place of the cake flour in any recipe.

One cup of substitute is equal to one cup of cake flour

***Can you make cupcakes out of this recipe ? Well, I am sure you can, never tried it myself but I am sure you could. If you try it make sure and share!

**The longer you can let this cake sit and "mature" the better it will be! (Make sure and hide it. )

Sour Cream Pumpkin Coffee Cake

Sour Cream Pumpkin Coffee Cake

This recipe is probably the best coffee cake I have ever tasted. It was a little big of a project putting it together but it was well worth it. I used a 9x13 pan, so when you spread out the bottom layer, it will be very thin, and the top later will be somewhat sparse, but in the end it turns out perfectly. I only had canned pumpkin pie filling, so I omitted the spices and cut down a little on the sugar. Also, I think the original recipe was in an 8x8 so I dont have an exact amount of time I baked it, but I know it was a little more than 35 minutes. I got this recipe from Closet Cooking

Chocolate Strawberry Nutella Cake

Looks very yummy! If someone really wants to make this a 4-layer for an awesome presentation, I suggest making the standard 2 layers, then slicing them in half (making 2 thinner rounds out of each). Use the same amount of fillings, but as it will be distributed amongst 4 layers, the cake will not be too bulky, and structural stability is maintained.

Cranberry Buttermilk Breakfast Cake

Cranberry Buttermilk Breakfast Cake

Ingredients:
  • ½ cup unsalted butter, room temperature
  • the zest from 1 orange zest
  • 1 cup + 1 tablespoon sugar
  • 1 egg, room temperature
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. kosher salt
  • 2 cups fresh cranberries
  • ½ cup buttermilk

Instructions:

1. Preheat the oven to 350ºF. Cream butter with orange zest and 1 cup of the sugar until light and fluffy.
2. Add the egg and vanilla and beat until combined. Meanwhile, toss the cranberries with 2 tablespoons of flour, then whisk together the remaining flour, baking powder and salt.
3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the cranberries.
4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes, then check for doneness by touching the top gently or by inserting a toothpick. If necessary, return pan to oven, check every five minutes or so — it took my cake a little bit over 45 minutes to cook. (Note: Baking for as long as 50 minutes might be necessary, especially if you made the batter in advance.) Let cool at least 15 minutes before serving.

Chocolate PB Banana Upside Down Cake

My kitchen smells sooo good with this in the oven! Can’t wait to try it out. I realized I only had 2 sticks of melted butter so used a combo of butter and Crisco for the choco batter. Cooking time a bit shorter. Not sure how it taste like. Smells great though!

Apple Cream Cheese Bundt Cake

Cream Cheese Cake Recipe
Apple Cream Cheese Bundt Cake

It isn't quite as delicious as my Grandma's, but there is a lot going on in this cake - nuts, apples, spices, cream cheese swirl, and praline glaze. Something for everyone, here is my Apple cream cheese bundt cake recipe worth to try ^^

Apple Cream Cheese Bundt Cake Recipe

Ingredients:

CREAM CHEESE FILLING:
  • 1 (8-oz.) package cream cheese, softened
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract

APPLE CAKE BATTER:
  • 1 cup finely chopped pecans (I was cheap and just bought the little 1/2 cup bag in the baking aisle)
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup firmly packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg Since mine was freshly ground, I used about half this.
  • 1/2 teaspoon ground allspice
  • 3 large eggs, lightly beaten
  • 3/4 cup canola oil
  • 3/4 cup applesauce
  • 1 teaspoon vanilla extract
  • 3 cups peeled and finely chopped apples (about 1 1/2 lb.) I used Mutsu, and it only took 2 to get to three cups!

PRALINE FROSTING:
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup butter
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar

Instructions:

  1. Prepare Filling: Beat first 3 ingredients at medium speed with an electric mixer until blended and smooth. Add egg, flour, and vanilla; beat just until blended.
  2. Prepare Batter: Preheat oven to 350º. Bake pecans in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Stir together 3 cups flour and next 7 ingredients in a large bowl; stir in eggs and next 3 ingredients, stirring just until dry ingredients are moistened. Stir in apples and pecans.
  3. Spoon two-thirds of apple mixture into a greased and floured 14-cup Bundt pan. Spoon Cream Cheese Filling over apple mixture, leaving a 1-inch border around edges of pan. Swirl filling through apple mixture using a paring knife. Spoon remaining apple mixture over Cream Cheese Filling.
  4. Bake at 350º for 1 hour to 1 hour and 15 minutes or until a long wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 15 minutes; remove from pan to wire rack, and cool completely (about 2 hours).
  5. Prepare Frosting: Bring 1/2 cup brown sugar, 1/4 cup butter, and 3 Tbsp. milk to a boil in a 2-qt. saucepan over medium heat, whisking constantly; boil 1 minute, whisking constantly. Remove from heat; stir in vanilla. Gradually whisk in powdered sugar until smooth; stir gently 3 to 5 minutes or until mixture begins to cool and thickens slightly. Pour immediately over cooled cake.

Triple Chocolate Cake Mousse

I have made this chocolate cake. It turned out great. I find that it is a cross between browney and chocolate cake. That is what I like about this cake. I have made this chocolate cake several time. Sometimes I called it a chocolate cake (when I want to cut it up in three layers and fill it up with either mousse or butter cream) and sometimes I called it browney, when I want to serve it just the way it is. Cutting it in squares and dusting cocoa powder over it.

This recipe makes enough mousse for about eight 2″-diameter cakes, give or take, depending on the size of your molds. Make sure you have enough freezer space available to accommodate a sheet pan with ring molds.

The whole recipe must be made at least 6 hours before you plan to serve because the mousse needs a chance to set up, but if you like, you can make each step of this recipe on different days to break up the labor, and just keep it in the freezer until serving day.

There will be plenty of cake and chocolate sauce left, which can both be wrapped well and frozen, or enjoyed as a cake sundae by cutting the cake into squares, topping with a scoop of ice cream, and drizzling with chocolate sauce.

Boston Cream Poke Cake Mix

One of my favorite desserts is Boston Cream Pie.  It is really not a pie but more like a cake.  I love the combination of cake with a cream filling topped with chocolate icing or ganache.   I decided to try making a Boston Cream Poke Cake using a cake mix. If you are looking for an extremely easy and great tasting dessert, try this Boston Cream Poke Cake

Texas Tornado Cake

Texas tornado cake contains fruit and nuts, with coconut icing. It’s not clear when this cake was invented, or where it’s from. Some insist that “Texas tornado cake” is another name for an “earthquake cake.”  This delicious cake is made with fruit cocktail in the batter & has a streusel-nut topping. A boiled coconut topping is poured over the cake while hot. Quick, easy, economical.

White Texas Sheet Cake

It is cake flavored. Stop for a second and imagine the flavor “birthday cake” and that is what this is. And the frosting is like the most incredible vanilla fudge with a rich hint of milk. It’s bliss. Seriously, best cake ever.

Cinnamon Roll Cheesecake

I made this last week and posted a picture of it to Facebook. What a reaction from everyone! You would think that all of my friends were starving!

Anyway, I did like it, but I thought it was just a bit too sweet, and a bit too cinnamon-y. Next time, I will reduce the amount of cinnamon in each element (the crust, cheesecake batter, and filling) and maybe use a bit less of the cinnamon filling. I normally love cinnamon, but it was a bit too overpowering in this recipe for me.

But it didn’t stop us from gobbling the whole thing up!

Cannoli Poke Cake

You are going to love this cake! A vanilla cake, soaked with sweetened condensed milk, covered in sweet cannoli filling. Ah-mazing! The thing about this cake that really appealed to me was that it’s not at all a typical cake.  The frosting is sweet, but it’s not “buttercream-sweet.”  It’s creamy, it’s rich, and when you get a little burst of chocolate, it’s like a little bonus – an extra bit of flavor – and it’s ALL good.

Moist Chocolate Cake

Making now for my brother's birthday. It really was easy, and it just came out of the oven with no disasters and no nervous breakdowns so far! This is a milestone - I am typically incapable of baking anything without bursting into tears and howling "I've ruined it!" at least once...Mine baked in 20 minutes, but that's probably because my mom's oven is psychotic and bent on cake destruction..

Strawberry Chocolate Chip Cake

This is a delicious recipe! However, in the 9″ square pan, there was only enough room for a little more than half of the strawberries and it was done in 30 minutes. I don’t know how those two elements of the recipe ended up so off for me, but it still turned out great tasting and made a lovely presentation!

Apple-Cream Cheese Bundt Cake

I had this recipe in an older Southern Living cookbook… but I sure am glad you brought it to mind just now. I’d had a ton of apples left over from a work event, two weekends in a row. I made the first cake and took it back to work the second weekend… wow! Did it get scarfed up, with many accolades for my baking talents! Made it round two, to the same results and am setting up to make it for Thanksgiving. I find that it’s better if made a day or two ahead and allowed to sit..
and the first time, I didn’t have any 10x sugar on hand, so I made straight-up pralines and poured on top. ;)

Lemon VeIvet Cake

I made this recipe for a birthday cake for my mother in law this weekend. Everyone loved it! This will now be my go to recipe for lemon cake.

The cake was tender in texture and flavourful. I did substitute the lemon extract with a lemon baking emulsion though. I multiplied the recipe 1.5 times and got two 2″ high 8″ rounds. The cake held up well to being covered in ganache and fondant. I’m looking forward to trying to stack cakes with this recipe, and the other variations. .

Milky Way Tart

Milky Way Tart

Ingredients:

For the milk chocolate mousse :
  • 5 ounces milk chocolate, chopped
  • 2 cups (1 pint) heavy cream
  • 2 teaspoons instant coffee powder
  • 1/8 teaspoon kosher salt

For the caramel filling :
  • 3/4 cup granulated sugar
  • 1/3 cup water
  • 3/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract

For the tart :
  • 1 baked and cooled 10-inch Pâte Sucrée tart shell
  • 3- to 4-inch slab milk chocolate, at warm room temperature, for decorating

PÂTE SUCRÉE RECIPE :
  • 1/2 cup (1 stick/114 grams) unsalted butter, at room temperature, cut into 8 pieces
  • 1/4 cup (50 grams) sugar
  • 1/2 teaspoon kosher salt
  • 1 cup (140 grams) unbleached all-purpose flour
  • 1 egg yolk

Instructions:

Using a stand mixer fitted with the paddle attachment, cream together the butter, sugar, and salt on medium speed for 2 to 3 minutes, or until pale and light. Scrape the sides and bottom of the bowl with a rubber spatula. Add the flour and beat on low speed for about 30 seconds, or until the flour mixes with the butter-sugar mixture. The mixture will look like wet sand. Add the egg yolk and continue to mix on low speed for about 30 seconds, or until the dough comes together.
Wrap the dough tightly in plastic wrap and refrigerate for about 1 hour. (At this point, the dough can be stored in the refrigerator for up to 5 days or in the freezer for up to 2 weeks. If frozen, thaw it in the refrigerator overnight before using.)

If making a pie shell, have ready a 9-inch pie pan dish. If making a tart shell, line a baking sheet with parchment paper and place a 10-inch tart ring on top. Remove the dough from the refrigerator and let soften at room temperature for about 30 minutes. Using a rolling pin, bang and flatten the dough into a disk about 1/2 inch thick. Flour the work surface, and then sprinkle the dough disk with a little flour. Roll out the dough into a circle 10 to 11 inches in diameter and about 1/4 inch thick for a 9-inch pie shell, or about 12 inches in diameter and just under 1/4 inch thick for a 10-inch tart shell. Make sure the work surface is well floured so the dough doesn’t stick to it, and make sure the disk itself is floured well enough to keep the rolling pin from sticking to it. Roll from the center of the disk outward, and gently rotate the disk a quarter turn after each roll to ensure the disk is evenly stretched into a nice circle. Don’t worry if the dough breaks a bit, especially toward the edges. You can easily patch any tears once you have lined the pan.

Roll the dough circle around the pin and then unfurl it on top of the 9-inch pie pan or the 10-inch tart ring. Press the dough well into the bottom and sides of the pan or ring, and use any scraps or odd pieces to patch up any tears or missing bits. Make sure the entire interior is well covered with dough, and then press one last time all the way around to ensure any holes have been patched. Trim the edge of the dough so it is even with the rim of the pan or ring.

Refrigerate the pastry shell for at least 30 minutes. The gluten needs a little time to relax so the pastry doesn’t shrink in the oven. (The pastry shell can be tightly wrapped in plastic wrap and refrigerated for up to 1 day or frozen for up to 2 weeks. Bake directly from the refrigerator or freezer.)

Position a rack in the center of the oven, and heat the oven to 350°F (176°C). Bake for 30 to 35 minutes, or until golden brown. Let cool to room temperature on a wire rack. If you are making a tart shell, remove the tart ring. Proceed as directed in individual recipes.
Make the mousse
Place the chocolate in a small heatproof bowl. In a medium saucepan, combine the cream and instant coffee powder and heat over medium-high heat until the mixture is scalded, which means when bubbles start to form around the edge of the pan but the cream is not boiling.

Immediately pour the hot cream mixture over the chocolate and let stand for about 1 minute. Then whisk gently until the chocolate is completely melted and the mixture is smooth. Strain through a fine-mesh sieve into a small container, stir in the salt, cover tightly, and refrigerate until it is absolutely, completely chilled, at least 8 hours and up to 3 days. A few hours is not enough. (Because the cream has been heated, it will not whip properly unless it is very cold.)

Make the caramel filling
Place the sugar in the bottom of a medium saucepan and slowly pour in the water. Stir gently to moisten the sugar. If any sugar crystals are clinging to the sides of the pan, brush them down with a pastry brush dipped in water. Place the pan over medium-high heat and leave it undisturbed until the mixture comes to a rolling boil. (You want to avoid crystallization of the syrup, which can happen if the pan is disturbed before the sugar starts to color.) Then continue to boil rapidly without moving the pan until the sugar syrup starts to caramelize. This will take 3 to 4 minutes: the sugar syrup will boil furiously; then as it thickens, it will boil more languidly; and then you will see some of the syrup starting to color and darken around the edge of the pan.

When you see color in the pan, gently swirl it in a circular motion so the sugar caramelizes evenly. The syrup will start to turn golden brown, and then as you swirl the pan, the syrup will continue to get a bit darker and then darker still. To check the true color of the caramel, tilt the pan so you can see the syrup covering the bottom. This is the actual color of the caramel, and you want to keep cooking the caramel until this layer is a deep amber-brown. It takes just seconds for caramel to go from great to burnt, so be sure to tilt and check constantly.

As soon as the caramel is ready, slowly add the cream and then reduce the heat to low. Be careful. The steam that rises when the cream hits the caramel is extremely hot. Let the caramel and cream sputter for a few seconds until the mixture settles down, and then whisk to mix in the cream. Turn the heat up to medium and whisk together the caramel and cream (the mixture will have hardened a bit) for 2 to 3 minutes, or until they come together. Whisk in the butter, salt, and vanilla. Remove from the heat, pour into an airtight heatproof container, and refrigerate for at least 4 hours and up to 1 week.

Assemble the tart

Place the tart shell on a flat plate. Spread about three-fourths of the caramel filling evenly in the bottom of the tart shell. Using a stand mixer fitted with the whip attachment or a hand-held mixer or a whisk, whip the mousse on medium speed until it holds soft peaks. Mound the mousse in the tart shell, and spread it evenly over the caramel filling. Drizzle the remaining one-fourth caramel filling in a crisscross pattern on top of the mousse. Using the back of a small knife or a vegetable peeler, shave curls from the milk chocolate slab. (Make sure the chocolate is slightly warm, or you will get splinters instead of curls.) Decorate the tart with the curls. Refrigerate the tart for at least 30 minutes before serving. (The tart can be stored in an airtight container in the refrigerator for up to 8 hours.)
